i typically teach two courses per semester

EE-171 Signals and Systems
EE-274 Introduction to Wavelets and Filterbanks
EE-275 Digital Signal Processing and Filtering
EE-276 Image Processing & Coding
EE-295 Statistical Signal Processing

these courses are taken, typically, by advanced EE undergraduates and grad students.
course syllabi undergo revision, on average, every two years.

all the courses have Labs, some as an integral part of the course, and others where experiments are assigned as needed.
we use MATLAB extensively.
in the DSP class we implement algorithms in real time on TI's TMS320C6713 DSP chip in conjunction with TI's Code Composer Studio and Matlab's Simulink.
