One of the favorite dishes we were served was a beet
salad. I decided to try to reproduce it.
After searching the internet, I came up with the following,
which is not exact, but very good.
Beet and Potato Salad
2 cups diced cold boiled potato
1 cup diced cold boiled beet
2 chopped hard-boiled eggs
2 teaspoons chopped onion
Mix and blend with mayonnaise.
